Rack of pork with maple caramelized apples

In The Oven
- Preheat oven to 375°F (190°C), rack in the center.
- In a bowl, mix 2 tbsp. (30 mL) butter, 2 tbsp. (30 ml), chopped herbs, 2 tbsp. (30 mL) maple liqueur, salt and pepper to taste.
- Season the pork rack with salt and pepper, then coat with the herb butter mixture. Place in a roasting pan and roast in the oven for about 30 minutes.
- Meantime, in a skillet, brown the apples and shallots in 2 tbsp. (30 mL) of butter.
- Add the maple syrup and cook until it sticks to the apples.
- Arrange the apples, shallots, and herb sprigs around the pork rack and add the broth.
- Continue cooking in the oven for 45 minutes, or until desired doneness. Add more broth if needed.
- For medium-rare meat, when a meat thermometer inserted into the pork reaches 140°F (60°C), remove from oven, leaving the thermometer in the meat.
- Place the rack, apples, and shallots on a serving dish. Cover with foil and let rest until the thermometer reads 145°F (63°C), about 15 minutes. Reserve 1 cup (250 ml) of cooking juices.
- Meanwhile, in a bowl, mix the flour and 10 ml (2 tsp) butter to make a beurre manié.
- In a small saucepan, bring the reserved cooking juices and maple liqueur to a boil. Whisk in the beurre manié and let thicken over low heat. Season with salt and pepper.
- Slice the rack into chops and serve with apples, shallots, and sauce.
