Bacon and cheddar Sloppy Joes

On the stove
- In a large skillet over medium-high heat, cook bacon until crispy, about 8 minutes. Set aside on a dish lined with paper towel. Leave 1 tbsp. (15 mL) of bacon fat in skillet.
- Add onion to skillet and sauté until lightly browned. Add tomato, garlic and spices. Continue cooking for 1 minute, stirring constantly. Add ground pork, breaking it up with a wooden spoon. Cook until golden brown and almost cooked.
- Add broth, ketchup, tomato paste, soy sauce, vinegar and mustard to skillet. Season with pepper. Mix well and simmer for 15–20 minutes or until sauce thickens. Season to taste.
- Spread ground pork mixture on bottom buns. Top with bacon and cheese. Close sandwich. Serve immediately with chips and pickles, if desired.
