Bacon and cheddar Sloppy Joes

On the stove

  1. In a large skillet over medium-high heat, cook bacon until crispy, about 8 minutes. Set aside on a dish lined with paper towel. Leave 1 tbsp. (15 mL) of bacon fat in skillet.
  2. Add onion to skillet and sauté until lightly browned. Add tomato, garlic and spices. Continue cooking for 1 minute, stirring constantly. Add ground pork, breaking it up with a wooden spoon. Cook until golden brown and almost cooked.
  3. Add broth, ketchup, tomato paste, soy sauce, vinegar and mustard to skillet. Season with pepper. Mix well and simmer for 15–20 minutes or until sauce thickens. Season to taste.
  4. Spread ground pork mixture on bottom buns. Top with bacon and cheese. Close sandwich. Serve immediately with chips and pickles, if desired.
