Pear and bacon meatloaf

In The Oven
- Place oven rack in middle position. Preheat oven to 350°F (180°C). Line a baking sheet with aluminum foil.
- Mix all meatloaf ingredients except bacon in a large bowl. Season with salt and pepper. Use your hands to mix.
- On the baking sheet, shape the pork mixture into a rectangle measuring approximately 9 in. x 4 in. (23 cm x 10 cm). Cover top of meatloaf with bacon slices so they overlap slightly. Lightly press bacon slices onto meatloaf.
- Bake for 1 hour.
- Meanwhile, prepare pear compote. Mix all pear compote ingredients in a small saucepan. Season with salt and pepper. Bring to a boil. Simmer over medium heat until pears are stewed and liquid is syrupy, about 30 minutes (cooking time may vary depending on the ripeness of the pears). Add water while cooking as needed.
- Remove from heat. Use a fork to mash the compote to the desired consistency.
- Remove meatloaf from oven. Turn oven up to broil. Brush meatloaf with 2 tbsp. (30 mL) pear compote. Return baking sheet to oven and continue cooking for 2–3 minutes, until bacon is golden brown. Remove baking sheet from oven and let meatloaf stand for 10 minutes before serving.
- Serve slices of meatloaf with remaining pear compote. Serve with roasted potatoes and a green salad, if desired.
