Zero-waste cheese fondue

Preparation
On the stove
- In a bowl, combine cheeses and cornstarch.
- In a fondue pot over medium heat, bring wine to a boil with garlic and nutmeg. Generously season with pepper. Gradually add cheese and stir until melted. Stir in lemon juice. If fondue seems too thick, add wine as needed.
- Place pot in centre of table with meats and sides.
Note
- If you don’t have a fondue set, use a large cast-iron skillet and bring to a boil on the stov-etop.
