Ground pork protein bowl with peanut sauce

Preparation
On the stove
- For the pork, heat oil and sauté green onions, garlic and ginger for 2 minutes in a large skillet set over medium-high heat. Add ground pork and cook for 4–5 minutes or until pork starts to brown, stirring with a wooden spoon. Add soy sauce, fish sauce and brown sugar. Season with pepper. Continue cooking for 2 minutes or until pork is cooked. Season to taste and keep warm.
- For the salad, massage black kale and red cabbage with vinegar and oil in a bowl. Add carrots and radishes. Season with salt and pepper. Stir to combine.
- For the peanut satay sauce, whisk all ingredients together in a bowl. Season with salt and pepper to taste.
- Divide the rice evenly between four bowls. Top with ground pork, black kale salad, broccoli, edamame, peanuts and toasted coconut. Drizzle with peanut satay sauce.
