Pork & curried vegetable skewers

On the BBQ
- In a large bowl, combine pork loin cubes with oil, honey, curry paste, fish sauce, and lime zest and juice. Season with salt and pepper. Cover and marinate for 30 minutes in the refrigerator.
- For the skewers, combine oil, cilantro and curry powder in another large bowl. Add vegetables. Season with salt and pepper. Stir to combine.
- Preheat barbecue to medium-high. Oil the grill.
- Thread the 8 wooden or metal skewers by alternating between pork cubes and vegetables.
- Grill skewers on barbecue on all sides for about 10 minutes or until the meat is medium rare.
- Serve skewers with basmati rice and cucumber raïta sauce, if desired.
