Spicy Pork Bowl with Marinated Cucumber

- In a bowl, combine all ingredients and add hot sauce to taste. Refrigerate for 30 minutes.
Spicy pork bowl
- In a bowl, combine broth, soy sauce, mirin, rice vinegar and cornstarch. Set aside.
- In a large skillet set over high heat, heat 15 ml (1 tbsp.) of vegetable oil and soften the onion. Season with salt. Transfer to a plate.
- In another large skillet set over high heat, heat remaining oil and sesame oil. Lightly brown ground pork, breaking it up with a wooden spoon. Add garlic and cook for 1 minute more. Add broth and reserved onions. Bring to a boil and let simmer for 3 to 4 minutes or until meat is cooked. Add sambal oelek to taste and season with pepper.
- Serve meat over rice in large bowls, topped with marinated cucumber.
- Serve with green onions, sesame seeds, sambal oelek and lime wedges.
