BBQ Québec Pork Loin

On the BBQ
- Fill a meat injector with Rosemont Spiced Rum and inject all over the pork loin for consistent flavour.
- Rub pork loin with Jamaican Jerk seasoning, making sure to cover the entire surface.
- Preheat the oven to 275 °C (135 °F).
- Cook loin until a thermometer inserted in the centre of the meat reads between 55 °C and 62 °C (130 °F to 145 °F), about 45 minutes.
- About 5 minutes before cooking is complete, brush the loin with Champion sauce.
- Slice loin into equally-sized pieces.
- Add Jamaican Jerk seasoning to taste.
- Sear loin slices on the barbecue for about 1 minute on each side.
