Pork Croque-Madame

In The Oven
- Preheat oven to 200 °C (400 °F).
- In a small saucepan set over medium heat, melt 45 ml (3 tbsp.) of butter. Add flour and cook for 1 minute while stirring. Pour in milk and bring to a boil, stirring constantly. Add 125 ml (½ cup) of cheese and continue cooking until melted. Season with salt and pepper. Cover and let cool.
- Arrange 4 slices of bread on a parchment-lined baking sheet. Add approximately 125 ml (½ cup) of pork roast on each slice. Cover with 30 ml (2 tbsp.) of béchamel sauce. Close with remaining slices and cover with remaining béchamel. Top with remaining cheese.
- Bake for 10 to 15 minutes or until cheese is lightly browned. Finish on broil if necessary.
- Meanwhile, in a non-stick skillet set over medium-low heat, melt remaining butter and gently cook eggs, half-covered, until egg whites coagulate.
- Place eggs on the croque madames. Season with salt and pepper. If desired, garnish with fresh herbs (parsley, chives, thyme). Serve with green vegetables.
