Pork Burritos
Ingredients
Note : you can also make burritos with the slow cooker pulled pork recipe or with strips of pork. This recipe can be prepared a few days in advance. Keeps well in the fridge or freezer.

In The Oven
- In a large skillet set over medium-high heat, melt butter and soften onion. Add meat and sauté until cooked and lightly browned. Add spices. Continue cooking for approximately 2 minutes. Season with salt and pepper.
- Pour into a large bowl and add beans, rice and corn. Add hot sauce and season to taste. Set aside.
- Place oven rack in middle position and preheat oven to 180 °C (350 °F).
- Place tortillas on a work surface. Divide meat mixture in the centre of each and top with cheese and jalapeños.
- Roll each tortilla, folding the two ends toward the centre to seal. Wrap in foil and bake for 15 to 20 minutes. Serve with sour cream and salsa.
Side
- Garden salad (lettuce, diced tomatoes, radishes and mandolin sliced cucumbers) or grilled corn.
