- In a large pot over medium heat, sauté the bacon, onion, celery, and garlic for about 10 minutes. Remove excess grease as needed. Add the ground pork and continue cooking for 10 minutes, stirring frequently.
- Add the diced tomatoes, dates, and sage; mix well. Continue cooking for 20 minutes. Season to taste.
- Combine the pasta and sauce, then serve.
