Asian-Style Pork Steak

  1. In a large bowl, combine oil, rice vinegar, soy sauce and green onions. Add steaks and coat well. Cover and marinate in refrigerator for a minimum of 2 hours (maximum 12 hours). Remove meat and set marinade aside.
  2. In one or two very large non-stick skillets set over medium-high heat, melt butter and brown steaks for 2–3 minutes on each side or until a thermometer inserted in the centre of a steak reads 61 °C (142 °F) for medium rare. Season with salt and pepper. Transfer to a plate, cover with foil and let stand for 3 minutes.
  3. In the same skillet, sauté mushrooms for 2 minutes. Season with salt and pepper. Add reserved marinade and broth, and bring to a boil. Simmer for 5 minutes. Pour in diluted cornstarch and stir to thicken. Season to taste. Pour sauce over steaks and serve.
