Pork and Couscous

On the BBQ

  1. Combine oil, white wine, thyme, cumin and garlic in a dish. Season with salt and pepper. Add pork steaks and coat well with mixture. Cover and marinate in refrigerator for 2 to 6 hours.
  2. Preheat barbecue to medium heat or use a grill pan.
  3. Grill steaks for 3–4 minutes on each side, or until a thermometer inserted in the centre of a steak reads 61 °C (142 °F) for medium rare. Transfer to a plate, cover with aluminum foil and let rest for 3–6 minutes.
  4. Prepare couscous. In a bowl, mix couscous with parsley, tomatoes, pine nuts and raisins. Season to taste.
  5. Thinly slice steaks and place on couscous salad. You may also serve as a cold salad.
