Christmas Pork Leg Roast

In The Oven
- In a heated skillet, brown each side of the roast for 3 minutes in a drizzle of oil. Remove roast. Add red wine and reduce by half.
- Place oven rack in middle position and preheat oven to 180 °C (350 °F).
- In a roasting pan, combine spices, vegetables and broth. Arrange roast in centre of pan and cover with foil.
- Bake for about 1 hour and 30 minutes.
- Once cooked, wrap roast in foil to keep warm.
- Recover cooking juices and pour into a saucepan. Remove sprigs of thyme and rosemary, bring to a boil and reduce by half.
- In a bowl, dissolve cornstarch in a bit of cooking juice; then add to saucepan. Continue cooking for 1 to 2 minutes, until sauce thickens. Adjust seasoning.
- Carve roast into thin slices and drizzle with gravy. Serve with mashed potatoes and some green vegetables.
