Spinach Pork Loin with Applesauce

In The Oven

  1. Preheat oven to 425°F (210°C).
  2. In a skillet set over high heat, heat half the oil and brown mushrooms for 3 minutes. Add garlic and shallots and cook for 1 minute more. Add spinach, wine, salt and pepper, and continue cooking until spinach wilts. Remove and set topping aside.
  3. In the same skillet, heat remaining oil and sear pork slices over high heat for 1 minute on each side. Place on a baking sheet.
  4. Cover each slice with the spinach mixture and sprinkle with grated cheese. Bake for 5 minutes. In the meantime, heat applesauce, cream, and thyme in a small saucepan for a few minutes. Serve pork with applesauce.
