Curry Pork Stir-Fry

On the stove

  1. In a large non-stick skillet set over medium-high heat, heat oil and brown pork for 3 to 4 minutes. Set aside on a plate.
  2. In the same skillet, sauté onion, curry, tomatoes, apricots and spinach for 4 to 5 minutes. Add pork and continue cooking for 1 to 2 minutes. Season with salt and pepper.
  3. Serve over aromatic basmati rice along with a green vegetable.
