Pork Stew with Mustard and Pears

On the stove
- In a thick-bottomed saucepan heat oil on medium, and lightly brown pork, leeks and carrots.
- Add soup stock and mustard and bring to a boil. Cover and reduce heat to medium-low.
- Let simmer 45 minutes.
- Add cornmeal mixture, pears, and tarragon.
- Simmer 5 minutes on low heat, then season to taste.
