Sweet & Sour Pork Tenderloin

On the stove
- In a small bowl, dilute 2 tsp. (10 mL) cornstarch with a bit of water. Set aside.
- In a dish, coat pork slices in remaining cornstarch and shake to remove excess.
- In a large, hot skillet set over medium heat, heat half the oil and brown pork slices on each side in two batches. Season with salt and pepper. Transfer to a plate and keep warm. Repeat the process with remaining oil and pork slices. Set aside.
- In the same skillet set over low heat, sauté green onions, ginger and garlic for about 1 minute. Add soy sauce, vinegar, ketchup and sugar, then cook for 1–2 minutes. Add diluted cornstarch and continue cooking, stirring until sauce thickens.
- Serve pork slices and drizzle with sauce. Garnish with baby greens.
