Pork Skewers on Italian Salad

On the BBQ
- In a large bowl, combine pesto, oil, and vinegar. Reserve ¼ cup (60 mL) of the marinade in the refrigerator.
- Add pork cubes to the remaining marinade and coat well. Cover and refrigerate at least 2 hours (or up to 12 hours).
- Preheat barbecue to medium heat or use a grill pan.
- Spread the cheese on a large plate. Set aside.
- Thread pork cubes onto the skewers, alternating with the tomatoes and mushrooms. Season with pepper to taste.
- Grill skewers on the barbecue or in the hot grill pan for 6–8 minutes, turning them with tongs, brushing regularly with marinade. Season with pepper.
- Roll the still-hot skewers in the cheese. Serve over romaine lettuce dressed drizzled with remaining pesto marinade.
