Did you know?
- Buy cutlets that are 6 mm (¼ inch) thick.
- Place the cutlet between two pieces of plastic wrap and pound it with a mallet to thin it out or make it more uniform.
- Cutlets can be breaded, or you can stuff them with thin slices of fruit, vegetables, cheese or lean ground pork and tie them up to make pork paupiettes.
