Ginger Curry Pork with Pomelo & Crushed Avocado

On the stove

  1. In a bowl, combine the mirin, soy sauce, ginger, rice vinegar , curry, garlic and yogurt.
  2. Add the pork and toss to coat with marinade. Refrigerate for about 2 hours or more. Drain the meat.
  3. In a large pan or wok over high heat, sauté the meat in oil, in two or three batches, until golden brown.
  4. Crush the avocado with a fork and add the lime zest and juice. Season with salt.
  5. Serve the ginger and curry pork on a bed of rice. Add bits of pomelo, black sesame seeds, cilantro and crushed avocado.
