The Loranger Family’s Mustard Pork Tenderloin Recipe

In The Oven
- Place oven rack in middle position and preheat oven to 200 °C (400 °F).
- In a heated skillet greased with your choice of fat, sear the pork tenderloins. Season and set aside.
- On a work surface over 2 pieces of food-safe plastic film, spread bacon slices in two groups of 4. Arrange each tenderloin over each group of bacon. Wrap tenderloins with the bacon.
- In the same skillet, sear tenderloins until bacon is slightly cooked but not browned.
- Arrange the 2 tenderloins on an oven-safe baking sheet lined with a silicone mat or parchment paper and bake for 15 minutes.
- Meanwhile, add onion to skillet and brown for 2 minutes. Add garlic, mustard, mustard seeds and deglaze with cognac. Add cream and simmer for 5 minutes. Check seasoning.
- Slice pork tenderloins. Drizzle slices with mustard sauce and then sprinkle with maple sugar nuggets. Serve with mashed potatoes.
