Fresh Salad Topped with Pork Flank Steak

Preparation
On the BBQ
- Combine olive oil, lime juice and zest, honey, sherry vinegar, mustard and shallot.
- Pour ⅓ cup of this mixture over flank steaks and marinate for at least 30 minutes.
- Divide remaining ingredients onto plates and refrigerate.
- Preheat barbecue to high.
- Remove meat from marinade and cook until medium rare, approximately 3–4 minutes on each side, depending on thickness of steaks.
- Season during cooking.
- Remove pork from grill and let rest for 2 minutes before slicing.
- Serve over fresh salad with dressing.
