Loin Roast with Pears & Cranberries

In The Oven
- Place oven rack in middle position. Preheat oven to 160°C (325°F).
- With the tip of a knife, make small incisions in the roast and insert garlic. In a large, oven-safe skillet over medium-high heat, heat oil and lightly brown roast on all sides. Season with salt and pepper.
- Arrange onion, carrot rounds, pears, and cranberries around the roast. Add broth and bake for 30 minutes. Season with herbs and continue baking for 10 minutes or until a thermometer inserted in the centre of the meat reads 60°C (140°F) for pink doneness. Set aside on a plate. Cover with foil and let stand for 15 minutes.
- Recover cooking juices and pour into a saucepan. Over medium heat, reduce by one-third and use as gravy. Carve roast into thin slices and serve with vegetables and fruit. Serve with gravy.
