Spinach Pork Loin with Applesauce

In The Oven
- Preheat oven to 210°C (425°F).
- In a skillet set over high heat, heat half the oil and brown mushrooms for 3 minutes. Add garlic and shallots and cook for 1 minute more. Add spinach, wine, salt and pepper, and continue cooking until spinach wilts. Remove and set topping aside.
- In the same skillet, heat remaining oil and sear pork slices over high heat for 1 minute on each side. Place on a baking sheet.
- Cover each slice with the spinach mixture and sprinkle with grated cheese. Bake for 5 minutes. In the meantime, heat applesauce, cream, and thyme in a small saucepan for a few minutes. Serve pork with applesauce.
