Sweet & Sour Pork Tenderloin

On the stove

  1. In a small bowl, dilute 2 tsp. (10 mL) cornstarch with a bit of water. Set aside.
  2. In a dish, coat pork slices in remaining cornstarch and shake to remove excess.
  3. In a large, hot skillet set over medium heat, heat half the oil and brown pork slices on each side in two batches. Season with salt and pepper. Transfer to a plate and keep warm. Repeat the process with remaining oil and pork slices. Set aside.
  4. In the same skillet set over low heat, sauté green onions, ginger and garlic for about 1 minute. Add soy sauce, vinegar, ketchup and sugar, then cook for 1–2 minutes. Add diluted cornstarch and continue cooking, stirring until sauce thickens.
  5. Serve pork slices and drizzle with sauce. Garnish with baby greens.
