Pork Cutlets with Mustard Sauce

On the stove
- In a large, hot non-stick skillet set over medium-high heat, melt butter and sear cutlets for 2 minutes on each side. Season with salt and pepper. Set aside on a plate.
- In the same skillet, sauté shallots until soft. Add broth, cream and Dijon mustard. Reduce until sauce thickens, stirring constantly. Season to taste.
- Return cutlets to sauce and simmer over low heat for 2–3 minutes. Add parsley. Serve cutlets over mashed potatoes and drizzle with sauce.
