Grilled Apricot Rack of Pork

Preparation
On the BBQ
- Preheat barbecue to medium.
- Season rack of pork with salt and pepper and sear on all sides. Place the rack on a sheet of aluminum foil, brush with sauce and continue cooking over low heat for 40 to 60 minutes, until the inside temperature reaches 155°F (68°C).
- Set any remaining sauce aside to baste during cooking and serve as gravy with the meat.
- Remove rack from the barbecue and let stand for 15 minutes before slicing between the ribs.
- Serve with gravy.
