Types of meat thermometers
Digital instant-read thermometers (approx. $20)
These thermometers are by far the most practical models to use because the instant and easy-to-read display on the digital screen.
Remote-probe thermometers (approx. $30)
These models have a wire that connects the probe (inserted into the food inside the oven) to the temperature display (outside the oven). This thermometer monitors temperature during the cooking process without having to open and close the oven door.
Pocket digital probe thermometers (approx. $15)
These mini thermometers measure a wide range of temperatures. Most have a sensitive tip, which is simply inserted about ½ in. (1 cm) into the food, which is suitable for thinner cuts.
Dial thermometers (approx. $10)
These thermometers are left in the meat while it is cooking in the oven. They are handy for larger cuts, such as roasts, but they are slightly less accurate. To obtain the most accurate temperature, the stem must be inserted at least 2 in (5 cm.) into the meat.
