Pork Tournedos with Avocado Sauce


Ingredients

1 Avocado, peeled, stone removed
1 Dry shallot, chopped
1 Clove of garlic, chopped
6 tbsp. Tomato juice 100 ml
1 tbsp. Tamari sauce (or light soy sauce) 15 ml
2 tbsp. Fresh chives, chopped 30 ml
1/2 tsp. Ground ginger 2 ml
To taste Salt and freshly ground pepper
1 tsp. Canola oil 5 ml
4 (5 oz. each) Québec Pork tournedos, 2,5 cm (1') thick 4 (150 g)

Cooking Instructions

Combine avocado, shallot, garlic, tomato juice, tamari, chives and ginger in a food processor. Pulse until coarsely puréed and season to taste.

Lightly brush tournedos with oil. Grill on medium heat on the barbecue, under the broiler, or in a grill-pan over medium-low heat for 6 to 12 minutes. Turn midway through cooking. Add salt after cooking, then let sit 1 to 2 minutes.

Serve with avocado sauce.

Serving Suggestion

Serve with a cold quinoa salad with tomatoes, toasted pine nuts and parsley.
